Beat the Winter Blues! With Confetti Blondies
I hate winter. I’ve threatened quite a few times to move to a place that’s permanently warm. One of these days I’ll actually do it, but while I’m waiting…here’s a really, really cute instant mood booster. Who doesn’t love sprinkles? Not this girl! I ADORE sprinkles. The colors…the texture…the sugar-yness…It’s all good! Slightly adapted from a recipe by Beantown Baker, I’m really surprised by the flavor of this blondie which has the texture of a brownie but tastes like as my neighbor, Darren, put it, “Like birthday cake in your mouth”.
Ingredients:
- 14 Tbsp butter, melted
- 1 1/2 cups brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 tsp almond extract (you can replace this with vanilla, but the almond extract gives the blondie a wonderful aroma and taste that makes you go “yummm…what is that?!)
- 2 cups flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1 cup white chocolate chips
- 1/3 cup sprinkles
Directions:
Preheat oven to 350F degrees. Line a 9x13 pan with foil and lightly spray with vegetable oil. In a large microwave safe mixing bowl melt the butter. Allow to cool for 5 minutes. Mix the sugars with the melted butter and beat until smooth. Beat in egg and then vanilla.
Add salt, stir in flour and baking powder. Stir in white chocolate chips and sprinkles.
Pour into prepared pan and use a greased spatula to evenly spread mixture in pan and level the top. Bake for 24-28 minutes or until set in the middle. Cool on rack before cutting.
